Pan Con Tomate (Grilled Bread with Tomato)

Guys, it's tomato season... which can only mean one thing! It's time to take advantage and make some Pan Con Tomate (Spanish style grilled bread with tomato). I had the opportunity to try this appetizer while visiting Barcelona, Spain last year. Ever since, I now always order this when eating at Spanish restaurants back in the states.

While the ingredients and steps are super simple, it's very important that you use the most fresh and best quality bread and plum tomatoes you can find. Note: You can use large tomatoes, but I opted for plum since they are better for making sauces. Whole Foods happened to have a batch that had an extra sweetness and made sauce that much tastier!

Pan Con Tomate (Grilled Bread with Tomato)​

Cook Time: 0 min

Servings: ~2

Ingredients:

  • ~1 cup of plum tomatoes

  • 1/2 baguette (sliced)

  • 1 garlic glove

  • ~2 tbsp olive oil

  • ~1 tbsp salt flakes (or sea salt)

Directions:

  • Carefully grate all plum tomatoes. Set tomato sauce aside.

  • Using a basting brush, brush sliced baguette with olive oil on both sides. Prep oven or grill, and toast or grill bread.

  • Slice garlic glove in half. Rub garlic on both sides of each bread. (Note: The more you rub, the stronger the garlic taste).

  • To serve, spread tomato sauce over warm, grilled bread. Garnish with a pinch of salt and enjoy!
