Citrus Hamachi Crudo

When it comes to combining completely different flavors (such as sweet and sour or sweet and savory), I tend to be a little bit more reserved. Unlike the majority of my friends, my taste buds' preference for savory well dominates over anything else. However, I will make exceptions if the combination is done well,

One of my favorite kind of raw fish is hamachi (yellowtail), and my favorite way to eat it is "crudo" style - raw fish that is dressed with oil and other seasonings. The key to eating it this way to make sure that you have the very best version each ingredient. For example, you definitely want to use the best quality olive oil, the freshest fruits, the greenest of greens, etc.

The below recipe for Citrus Hamachi Crudo is tasty, clean, and simple to make. While I used orange this time around, you can substitute with grapefruit or try another sweet citrus fruit.

Citrus Hamachi Crudo

  • ~4 ounces sushi-grade hamachi fillet (yellowtail)

  • 2 tbsp ponzu sauce

  • 1 tsp fresh lemon juice

  • ~1/4 avocado

  • 1 slice of orange or grapefruit (segmented)

  • 1 tbsp high-quality olive oil

  • Pinch of sea salt

  • Microgreens (for garnish)


  • Using a sharp knife, slice the hamachi fillet (with the grain).

  • Mix ponzu sauce and lemon juice in a bowl. Add hamachi and let sit.

  • While the hamachi marinates, prep the avocado (by cutting into cubes) and orange (by segmenting and cutting into small pieces).

  • Separate the hamachi slices from the ponzu and lemon sauce and spread out hamachi slices on serving plate. Then add avocado, orange, and microgreens. Drizzle with olive oil and sprinkle sea salt over. Serve immediately or chill until it's time to serve.
